FDL High School Students Participate In Pro Start Invitational

Fond du Lac High School’s ProStart teams competed in the Wisconsin ProStart Invitational on Tuesday, March 14 at the Midwest Foodservice Expo in Milwaukee. The major sponsors for this year’s competition included Backyard Grill, Aramark, Scott’s Discount Printing, and The Butcher’s Block.

Culinary Team members (pictured above) created a 3-course meal consisting of ebelskivers with beer cheese dip, a creamy stuffed burger with cherry barbecue sauce served with green beans almondine and fried potatoes, and dessert shooters featuring chocolate mascarpone mousse, cranberry apple crisp and brandy old fashion creme. Students worked under the direction of coach Stephanie Fox and Chef Mentor Susan Horvath. Culinary Team members: Charly Freund, Cameryn Smith, Shannon Lobajeski, Breyanne Mauer, and Trenton Murtha

The Management Team created a restaurant concept from scratch. Their restaurant, called Urban Fusion, served only breakfast-lunch combination dishes such as crepe tacos and a barbecue chicken sandwich served on French toast. Students prepared a written proposal and presented their concept to five panels of judges. Coaches Stephanie Fox and Barb Ames led students, with the assistance of Nathan Haupt.
