FDL HS Culinary Arts Competes In Whipping Up Wellness

Fond du Lac High School’s culinary arts students Ashley Lofy (second from left), Shannon Lobajeski (center), and Rebekah Birschbach, the Cooking Cardinals, took on the challenge of creating a recipe that was nutritious, easily incorporated into the food service program, used at home, and used some kind of bean or pea, this year’s featured ingredient. They took what they hoped was a winning recipe accompanied by their advisor, Stephanie Fox (left), to the Whipping Up Wellness Student Chef competition on May 18 in Madison.

 

Working under stringent time limits, they prepared their sandwich, a New Healthy Veggie Burger, an original recipe developed in class consisting of chickpeas, black-eyed peas, sauteed vegetables, a spicy sauce and garnished with fresh veggies on a whole wheat bun.

 

The panel of judges evaluated the team’s delectable creation based on use of flavors, variety of textures, serving temperature; appearance and presentation, including color and plate appeal; and originality, including creativity and student appeal. Qualifying entries will become part of the fifth annual student chef cookbook, published by the Wisconsin Department of Public Instruction.
