FDL HS Culinary Arts Teams Does Well In State Competition
Congratulations to Fond du Lac High School’sProStart/ Culinary Arts team which placed 5th in State out of 23 teams that competed. Teams were judged on check in (everything labeled and at proper temp), safety and sanitation, teamwork, taste, appearance, knife skills, mise en place (set up), menu and costing. At competition they are provided with two 6-ft. tables and two burners; no other cooking devices are allowed; and access to running water is limited to 15 minutes during set-up.

In the foreground are the dishes they prepared: Starter – Cranberry Goat Cheese Crostini with caramelized onions and prosciutto-wrapped apples; Entrée – Prosciutto-wrapped Pork Roulade served with a cold quinoa salad, carrots, cranberry sauce and blanched kale; Dessert – Steamed Apple Cranberry bread pudding with mascarpone and cranberry sauce, served with a poached pear.
