UW-Extension Assisting In Keeping Meat Supplies Going

As the state’s farmers
continue to reel after the closures of Wisconsin‘s
largest meat packing companies, efforts are being made to keep their livestock
in the food supply. UW-Extension Meat Specialist Jeffrey Sindelar says groups
are looking for buyers for all of those animals that would have gone to the
major meat packing companies.

 

“Every animal that is
born and raised for food production, if it’s not being utilized for food
production it’s a waste. And that waste is something that is really driving all
the people that are trying to find ways to not waste those animals.”

 

Sindelar says that the UW is even
stepping up at its own processing facilities to try and handle the surplus.
